Recipe Ingredients for Quinoa Apple Raisin Almond Salad

1 cup uncooked quinoa
2 cups water
1 cup diced apple
1/2 cup toasted almonds
1/3 cup raisins
2 tbsp honey
1/4 cup lemon juice
3 tbsp olive oil
1 Salt and pepper to taste

Recipe Directions for Quinoa Apple Raisin Almond Salad

  1. Take a heavy bottomed pan, heat water to cook quinoa and let it come to boil.

  2. Add quinoa, mix well, cover and let it simmer for 15-20 minutes.

  3. Let it cool down completely.

  4. Meanwhile dice apples and toast almonds.

  5. Add raisins, apples, almonds to cooked and cooled quinoa.

  6. Refrigerate it till right before serving.

  7. Mix all the ingredients of dressing in bowl.

  8. Toss salad with dressing right before serving and serve it before any meal or enjoy it simply as an evening snack.
