Vegan muffins with subtle almond flavor and whole grains.

Recipe Ingredients for Quinoa Almond Muffins

1 cup almond milk
1/4 cup canola oil
1 tbls flaxseed
1 1/2 cup flour
1/4 cup maple syrup
1 1/4 cup quinoa
1/2 cup dried prunes

Recipe Directions for Quinoa Almond Muffins

  1. Mix all ingredients

  2. Add .5 tps salt

  3. Add 1.5 tsp baking powder

  4. Add .5 tsp cinnamon and cardemon

  5. Add cooked quinoa

  6. Fill 12 muffin cups.

  7. Cook at 350 for 20 minutes
