An asian style stir fry that uses no oil. Any combination of vegetables is fine. Best to limit to about 3 for simplicity.

Recipe Ingredients for Quickie Stir Fry

1 cup water (Or vegetable stock)
1/4 cup low sodium soy sauce
1 tbs grated ginger
3 tsp minced garlic
1 tsp thai pepper (adjust to taste)
1 tsp corn starch
8 oz sliced mushrooms
1 lb asparagus
2 cups baby bok choy
1 1/2 cup brown rice

Recipe Directions for Quickie Stir Fry

  1. Cook the rice according to package directions.

  2. Chop the vegetables to bite size.

  3. Combine the first 6 ingredients. Place in a wok or large sauce pan. Bring to a simmer.

  4. Place the vegetables in the pan and cook on high for about 3 minutes, until the vegetables are crunchy-tender.

  5. Serve immediately over brown rice.
