Recipe Ingredients for Quick Vegetable Soup

1 tbsp olive oil
28 oz chicken broth, reduced sodium
4 roma tomatoes, chopped
8 oz white mushrooms, sliced
1/4 large vidalia onion, chopped
1/2 head of green cabbage, chopped
1 red bell pepper, chopped
4 cloves garlic, chopped
1 cup celery, chopped

Recipe Directions for Quick Vegetable Soup

Saute onions, peppers, garlic, and mushrooms in olive oil. Add chicken broth, tomatoes, cabbage, and celery. Cook for 25 minutes.
