My version of "0" point vegetable soup.

Recipe Ingredients for Quick Vegetable Soup

15 1/2 oz beef broth, 99% fat free
15 1/2 oz diced stewed tomatoes, italian
2 cups water
1 small chopped onion
2 stalks chopped celery
1 1/2 cups frozen mixed vegetables
1/4 cup barley
5 1/2 oz V8 juice, low sodium
2 tsp italian seasoning
1 dash black pepper

Recipe Directions for Quick Vegetable Soup

  1. Combine broth, tomatoes, water, onion and

  2. celery in saucepan. Bring to a boil. Add balance of ingredients and bring back to a boil. Add seasonings to taste and simmer until all vegetables are cooked.

  3. Makes 6 (1cup) servings.
