Recipe Ingredients for Quick Veg Soup with Dumplings

1 tbsp vegetable oil
250 g onion, chopped
400 g carrot, diced
1 tsp mixed herbs
400 g potato, diced
100 g peas
2 1/4 pint water
3 vegetable stock cubes
50 g Suet
100 g self raising flour
1/4 tsp salt
1 tsp mixed herbs

Recipe Directions for Quick Veg Soup with Dumplings

  1. Heat oil in large pan. Fry onions gently for 3 minutes.

  2. Add carrots and simmer gently with lid on for five minutes

  3. Add potatoed, mixed herbs and peas. Add water and crumbled stock cubes. Bring to the boil and turn down to simmer.

  4. Combine remaining ingredients in a bowl. Add sufficient water to bind to a soft dough. Cut into 10 equal bits and roll into balls, then drop into soup.

  5. Cover and simmer for 15 minutes or until potatoes and carrots are tender.

  6. Serve, with crusty bread if liked.
