Recipe Ingredients for Quick Tomato and Spinach Pasta

2 T olive oil
1 garlic clove, minced
1/2 medium onion, chopped
1 c. chopped tomato
1 1/2 c. baby spinach
1/2 c. low sodium chicken broth
1/4 c. fresh basil, julieanned
1/4 c. parmesan cheese
8 oz. whole wheat pasta

Recipe Directions for Quick Tomato and Spinach Pasta

  1. Saute onion and garlic in olive oil.

  2. Add Tomatoes, saute 3-5 minutes

  3. Add spinach, saute 2 minutes

  4. Add chicken broth, reduce by half

  5. Add basil and cheese

  6. Cook pasta according to package directions, add to sauce to coat
