Quick vegan soup. Ready in 10 minutes.

Recipe Ingredients for Quick Tofu, Bok Choy and Spinach Soup

85 g Blue Menu Low Fat Tofu Extra Firm
2 cups bok choy
2 cups spinach
3 large mushrooms
1/5 cup green onion
1 tsp Instant Soup & Seasoning Mix
1 tbsp low sodium soy sauce
1/2 tsp toasted sesame seed oil
1 1/2 cups water

Recipe Directions for Quick Tofu, Bok Choy and Spinach Soup

  1. Chop all ingredients to desired size. (I'd recommend cutting the tofu into 2x1x1cm pieces.)

  2. Put everything except for the onions, soup powder and sesame seed oil into a pot.

  3. Bring to a boil. Add soup powder. Cook on medium/high for 5 minutes.

  4. Take off heat. Add onions and sesame seed oil. Stir.
