Simple, savory meal - can use chicken, beef or pork

Recipe Ingredients for Quick Thai Green Curry

2 tbs shallots, minced
2 tbs ginger root (about 1 inch), minced
2 tsp green curry paste
14 1/2 oz low-sodium chicken broth
1 lb beef, cubed
16 oz coconut milk
8 oz bamboo shoots
1/4 tsp salt
1 c basil leaves, shredded
1 lime, quartered
1 c brown rice

Recipe Directions for Quick Thai Green Curry

  1. Stir fry shallots and ginger until fragrant, 1 minute.

  2. Reduce heat to medium, stir in curry paste and chicken broth, cook until broth is reduced by half, about 10 minutes.

  3. Stir in meat (can use chicken or beef), coconut milk, bamboo shoots and salt, heat to a boil.

  4. Reduce heat, simmer 5 minutes. Stir in basil.

  5. Serve in bowls over rice with lime wedges on the side.
