Recipe Ingredients for Quick Thai Beef Salad

1/4 c lime juice
2 tbs lime juice
1/4 c fish sauce
1 tbs fish sauce
2 serrano peppers, minced
1 tsp sugar
1/2 lb roast beef, rare, thinly sliced (from the deli)
5 scallions, cut into 1-inch slices
3 tbs shallots, thinly sliced
1 tomato, thickly sliced
1 c cucumber, peeled and thinly sliced
8 oz Fresh Express Spring Mix Lettuce

Recipe Directions for Quick Thai Beef Salad

  1. In a large bowl, mix together lime fish sauce, chiles and sugar; stir to dissolve the sugar.

  2. Add the beef, scallions, shallots, tomato, cucumber and lettuce, toss gently and serve.
