Recipe Ingredients for Quick Sunbutter Noodle Stirfry

1 tablespoon Sunbutter
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 Lime (38 g) Juice (lime+yields)
1 tablespoon oil
1 carrot, shredded
2 scallions, chopped
4 cups Spaghetti (cooked and drained)
1/4 cup chopped cilantro

Recipe Directions for Quick Sunbutter Noodle Stirfry

  1. In a small bowl, whisk together the sunbutter, soy sauce, rice vinegar, and lime juice. Set aside.

  2. In a large skillet heat the oil. Add the carrot and scallions, and cook, stirring, about 1 minute.

  3. Add the noodles and sunbutter sauce. Stir, cooking, until sauce is well distributed and noodles are hot through.

  4. Toss with cilantro.

  5. Serve hot or cold.
