2 tbls olive oil
1 pound lamb
4 carrots
1 onion
1 tbls all purpose flour
1/2 cup dry white wine
2 cups low-sodium chicken broth
14 1/2 ounce diced tomatoes
4 ounces green beans
1 cup parsley

Recipe Directions for Quick Spring Lamb and Vegetable Stew

  1. heat 1 tbls oil over medium-high heat. Add lamb. Cook, turning occasionally, until medium-rare, 6 to 8 minutes; transfer to a plate.

  2. Add carrots, onion, and remaining oil. Cook until beginning to soften, 3-4 min. Add flour and cook for 1 min. Add wine and scrape up any brown bits.

  3. Add broth, tomatores, and beans. Simmer until vegetables are tender, 8-10 min. Stir in lamb, parsley, 1/4 tsp pepper and serve immediately.
