Easy, can prep vegetables ahead along with spinach fettuccine, up to 3 days. You can also freeze vegetable portion for up to 3 months.

Recipe Ingredients for QUICK SPINACH FETTUCCINE

2 teaspoons garlic, minced
1/2 cup red onion
1 cup mushrooms, sliced
1 carrot, sliced
1 pound asparagus
1 artichoke hearts
2 pounds spinach fettuccine
1/2 cup mozzarella cheese

Recipe Directions for QUICK SPINACH FETTUCCINE

  1. Have all vegetable cut up and ready to cook.

  2. Add olive oil to hot pan.

  3. Add all vegetables except the artichoke hearts.

  4. Stir.

  5. Add can of drained artichoke hearts.

  6. Salt & Pepper to taste.

  7. Stir in cooked spinach fettuccine.

  8. Place mozzarella on top and serve.
