Recipe Ingredients for Quick and Spicy Carrot Slaw

1/2 cup raisins
2 tblsp red wine vinegar
1/4 cup fresh lemon juice
1/4 tsp paprika
1/4 tsp cumin
1/4 tsp cayenne pepper
2 tblsp olive oil
4 cups grated carrots
1/2 cup cilantro

Recipe Directions for Quick and Spicy Carrot Slaw

  1. Place reisins in small pot, cover with cold water, bring to boil over medium-high heat. Immediately turn off heat and let raisins sit while you prepare rest of salad, or until very plump.

  2. In a large non reactive bowl, whisk together red wine vinegar, lemon juice, paprika, cumin, cayenne and olive oil. Add carrots. Drain raisins, add to salad, and tooo until combined. Add cilantro, taste and adjust seasonings.
