Yummy shrimp dish easily served over rice

Recipe Ingredients for Quick Shrimp Dish

1 tbsp of smart balance butter, light
1 medium Onion, chopped
1 cup of Mushrooms, sliced
1 pinch of oregano
1 pinch of basil
1 pinch of Parsley
14 1/2 oz of tomatos
1 clove of garlic minced
1 tbsp lemon juice
1 pound of shrimp
1 pinch of salt
1 pinch of pepper

Recipe Directions for Quick Shrimp Dish

  1. mix together the garlic, lemon juice, salt, pepper and shrimp in a non metallic bowl and set aside.

  2. Heat the oil in a large frying pan, then add onions and fry until translucent (couple of mins), then add mushrooms & herbs and cook for about 2 - 3 mins or until the mushooms start to brown off.

  3. Add the can of tomatoes stir well and simmer for about 2 minutes stiring continuoulsy. Then add the shrimp mixture stir well and simmer for a further 2-3mins or until the shrimp are pink and cooked through. If using cooked shrimp, just simmer in the sauce long enough for them to be heated through.

  4. Add as much or as little of the chilli pepper that suits your taste, I usually only add a quarter to a half, so it's just a little spicy. You can also add a little fish sauce too, but this will make the dish a little more salty.
