Recipe Ingredients for Quick Shrimp Broil

1 teaspoon extra virgin olive oil
2 garlic cloves, minced
1/2 pound large shrimp, peeled and deveined
1 tomato, coarsely chopped
1/4 cup dry white wine
1/3 cup shredded part-skim mozzarella cheese

Recipe Directions for Quick Shrimp Broil

  1. Preheat the broiler

  2. In a medium ovenproof skillet, heat the oil. Add the garlic and cook, stirring constantly, until lightly browned, about 1 minute.

  3. Add the shrimp and tomato; cook, stirring as needed, until the shrimp turn pink, 3-5 minutes. Add the wine and cook 1 minute longer.

  4. Sprinkle evenly with the cheese and broil until the cheese is melted and golden, 2-3 minutes.
