Sweat onions in oil, add mushrooms and cook until the begin to reduce in size then add remaining vegetables and slightly drained can of diced tomatoes. Allow the vegetables to cook down for a few minutes then drain off the excess liquid and add seafood. Season with salt, peper and chili flake to taste throughout the cooking process. Serve with Quinoa cooked in shrimp broth.

15 ounces diced tomatoes
1 cup onions
1/2 cups bell pepper
1 cup zuccini
2 cups mushrooms
1 tablespoon garlic
2 tablespoons olive oil
8 ounces shrimp
4 ounces squid
4 ounces scallops
