It's not anything special or especially healthy; this is just a classic recipe for cornbread. It's intended to be served with chilies and soups since it's unsweetened. If desired, one could of course add finely chopped jalapeņos to give it a Tex-Mex twist.

Recipe Ingredients for Quick Savoury Cornbread

1 cup all-purpose flour
1 cup cornmeal
4 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
1 cup skim milk
1/4 cup canola oil

Recipe Directions for Quick Savoury Cornbread

  1. In a large bowl, combine flour, cornmeal, sugar, baking powder, and salt; mix thoroughly.

  2. In a separate bowl, mix eggs, milk, and oil. Stir liquid ingredients into dry ones just until blended.

  3. Coat an 8-inch (2 L) baking pan with Pam cooking spray; pour in mixture. Bake in a 400 degree oven for 30-35 minutes, or until bread is firm and tester comes out clean.

  4. Cool on wire rack for a few minutes before serving.
