Recipe Ingredients for Quick Salmon and Bean Salad

1 lb salmon fillet, cut into cubes
1/4 cup olive oil
2 tbsp white wine vinegar
1 tbsp Dijon Mustard
3 cups green beans, blanched
1 cup Black Beans - Cooked, Boiled, Without Salt
1 green onion, sliced
2 tbsp finely shredded fresh basil

Recipe Directions for Quick Salmon and Bean Salad

  1. In a skillet, sauté the onions and the celery in olive oil

  2. Add the salmon and cook gently, 2 - 3 minutes

  3. Season with salt and pepper

  4. In a salad bowl, combine the vinegar and mustard. Whisk in 2 tbsp oil

  5. Add the remaining ingredients and toss well

  6. Season with salt and pepper, and garnish with the salmon cubes
