I had some leftover salmon and a craving for alfredo sauce while my husband was away for work so I came up with this!

Recipe Ingredients for Quick Salmon Alfredo

1 wedge laughing cow cheese
2 tbsp parmesan cheese
1/2 cup 1% milk
2 cloves garlic
1 tbsp chives
1 tsp garlic powder
1/4 cup onion, minced
1 tsp black pepper
4 piece+whole cremini mushrooms
4 spears+raw Asparagus
3 oz salmon
90 g Blue Menu 100% Whole Wheat Pasta Penne Rigate

Recipe Directions for Quick Salmon Alfredo

  1. Put pasta on to boil as per package directions.

  2. In the meantime combine all ingredients for the sauce except salmon and bring it up to a simmer.

  3. Add (cooked) salmon and continue to simmer on low for 2-3 minutes or until salmon is heated through.

  4. Add pasta to sauce once it's ready, toss everything together and top with some romano or parmesan cheese (topping is not part of this recipe, add separately if logging)

  5. Enjoy!
