Recipe Ingredients for Quick Roasted Tomato Soup

5 pounds Roma tomatoes
56 ounce plum tomatoes (recommended: San Marzano)
1 tablespoon basil leaves
1/8 cup jalapenos
2 red onions, quartered,
1 tablespoon garlic
1 tablespoon parsley
1 tablespoon thyme
1/8 cup Extra-virgin olive oil
1 Pepper
1/2 cup milk

Recipe Directions for Quick Roasted Tomato Soup

  1. In a big roasting pan combine everything, coat well with olive oil and roast in a preheated 400 degree F oven. Stir occasionally until everything is caramelized and black around the edges. Season with pepper.

  2. Run everything through a food mill on a medium dye over a medium pot.

  3. If too thick, thin with water Add milk right before service
