Recipe Ingredients for Quick risotto

4 oz butter
1 cup rice
2 leeks (chopped)
1 onion (chopped)
15 fl oz white wine
1 pint stock
100 g cod (or smoked haddock, chopped)
1 tbsp parsley

Recipe Directions for Quick risotto

  1. melt butter in pan add leeks & onion, fry gently

  2. add rice & wine

  3. add stock and cook for 5 minutes

  4. add fish and cook until slightly sticky

  5. serve and top with parsley
