Rice Pudding can be served with canned fruit Serve warm or cold.

Recipe Ingredients for Quick Rice Pudding

13 1/2 ounces coconut milk
1 cup soymilk
1 tablespoon cornstarch
1 teaspoon vanilla extract
2 tablespoons maple syrup
1 dash salt
5 cups cooked brown rice
1/3 cup raisins

Recipe Directions for Quick Rice Pudding

  1. In a sauce pan, heat all ingredients except rice over medium heat, stirring constantly till thickened.

  2. Add cooked brown rice and continue stirring to heat thoroughly.

  3. Add raisins if desired. Chill before serving.

  4. Makes 10 servings
