This is a quick casserole that can be tossed together in 15 minutes and baked in 15 more.

Recipe Ingredients for Quick Rice Casserole With Black Beans

14 oz Brown Rice
2 small Squash, Summer, Zucchini, Includes Skin
1 medium (2-1/2" dia) Onions
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1/2 cup Sun-Dried Tomato
3 cup Light
1/2 cup Black Beans

Recipe Directions for Quick Rice Casserole With Black Beans

  1. Chop the zucchini, onion, and peppers. Heat a pan with 1 TBSP oil and add veggies. Cook until onions are transparent, 7-10 minutes on medium heat.

  2. Meanwhile, put chicken broth in pot and bring to a boil. Add 14 oz of brown minute rice. Turn off heat and let sit for a few minutes.

  3. Add beans to the veggies, as well as salt and pepper to taste.

  4. Toss rice and veggies into a large casserole dish. Shred 3/4 cup of jack cheese and sprinkle it on top of rice mixture.

  5. Bake at 400 degrees uncovered for 15 minutes to melt cheese.

  6. Enjoy!
