I use this as dessert or mix it with other foods such as applesauce or oatmeal and vanilla yogurt. I also use only 1/2 of a 3 oz. box of jello, but most people prefer the extra sugar.

Recipe Ingredients for Quick Rhubarb Sauce

8 c. chopped rhubarb
3 oz. pkg jello (recommend strawberry, raspberry, or cran-raspberry)

Recipe Directions for Quick Rhubarb Sauce

  1. Using a 3 qt. saucepan, add enough water to cover the bottom of the pan and then add rhubarb. Cover and cook over medium heat until the lid starts to bubble up, reduce heat and continue to cook until you reach your desired consistency.

  2. Remove from heat and stir in your favorite jello flavor. Serve warm or let cool completely and refrigerate any unused sauce.
