Threw a bunch of leftover stuff in a pot for a quick dinner when I needed curry :)

Recipe Ingredients for Quick Red Curry Lentils

0.5 cup dry Lentils
3 serving Coconut Milk
1 cup Crushed Tomatoes
1 tbsp Red Curry Paste
1 tsp Cumin
1 tsp Crushed Garlic
1 tsp(2 g) Ginger Root
1 cup Rishikesh Whole Grain Brown Basmati Rice

Recipe Directions for Quick Red Curry Lentils

  1. put lentils & 1.5 cups water in pot, cook till water is almost absorbed, add remaining ingredients, except grains & cook 15 minutes.

  2. add grains& heat through
