Red Beans & Rice from the Rockford Register Star

Recipe Ingredients for Quick Red Beans & Rice

1/2 pound ham
2 tablespoons olive oil
1/2 onion
1/2 cup celery
2 cloves garlic
32 ounce kidney beans
1/2 teaspoon red pepper
1 cup water

Recipe Directions for Quick Red Beans & Rice

  1. Combine ham and oil in a wide skillet and cook over medium heat, adding onion, celery and garlic as you prepare them.

  2. Increase the heat to medium-high and cook, stirring often, until celery is soft and onions are translucent, about 5 minutes.

  3. Add canned beans, pepper, and water. Bring to a boil, then reduce heat to maintain a slow simmer for 20 minutes. (Thin beans to desired consistency with more water if you want.)

  4. Serve with rice.
