From Very Best Baking website. Their recipe called for pumpkin pie spice but as I can't have nutmeg, I'm going to substitute cinnamon.

Recipe Ingredients for Quick Pumpkin Pudding

12 serving Evaporated Milk
15 oz Pumpkin
5.1 oz Instant Pudding and Pie Filling Vanilla
1 tsp Cinnamon, Ground

Recipe Directions for Quick Pumpkin Pudding

  1. Beat pudding mix and evaporated milk according to package directions in large bowl; refrigerate for 5 minutes. Add pumpkin and spice; mix well. Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve.

  2. Makes 7 servings, 1/2 cup each.
