A delicious dessert-- just without the crust!

Recipe Ingredients for Quick Pumpkin Pie Filling or Pumpkin Custard

15 ounces canned pumpkin
1/2 cup sugar
10 1/2 ounces very vanilla soy milk
2 eggs
1 tsp cinnamon
1 tsp ginger
1 tbl vanilla
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tsp salt

Recipe Directions for Quick Pumpkin Pie Filling or Pumpkin Custard

  1. Preheat oven to 450.

  2. Mix together pumpkin and spices in a medium mixing bowl.

  3. Add 2 beaten eggs.

  4. Add 1 to 1 1/2 cups milk according to how thick pumpkin is cooked.

  5. Spray baking dish with Pam, pour custard mixture in baking dish.

  6. Bake at 450 degrees for 15 minutes and reduce heat to 350 degrees, bake until custard is firm, approximately another 30 minutes. Test for done ness by inserting a sharp knife in the middle, it is done when it comes out clean!
