Recipe Ingredients for Quick Pumpkin Bread

1 3/4 cup all-purpose flour
1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1 1/3 cup sugar
1/3 cup shortening
2 large eggs
1 cup canned pumpkin
1/3 cup milk
1/2 teaspoon vanilla extract
1/3 cup chopped dates

Recipe Directions for Quick Pumpkin Bread

  1. Preheat oven to 350.

  2. Sift together flour, baking powder, salt, baking soda, cinnamon, and cloves in a small bowl.

  3. In a large bowl beat together the shortening and sugar until light and fluffy. Add the eggs, one at a time, mixing until they are just combined. Add the pumpkin and mix until just combined. Add the vanilla to the milk.

  4. Add the sifted dry ingredients in 3 parts, alternating with the milk. Make sure to scrape scrape the bowl between each addition. Do not over mix.

  5. Fold in the nuts, raisins and dates. Pour batter into a greased ban and bake for 1 hour of until a toothpick inserted in the center comes out clean.
