Quick Pork and Noodles Recipe

Threw this together last night and my future hubby said it would make the Amish envious! (he's related to a million amish!) So good and VERY quick to make!

Recipe Ingredients for Quick Pork and Noodles

1 pound pork roast, chunked
1/2 large onion, chopped
12 oz (1 large can) mushrooms, drained and rinsed
48 g (2 packages dry mix) low sodium brown gravy
4 cups egg noodles
2 cups water

Recipe Directions for Quick Pork and Noodles

  1. Trim all the fat off of the roast. (We picked the roast because it's cheap, fyi, any healthy cut of pork will work!) Cut it into small chunks and cook. I boiled it until tender and then threw it into a pan with a teensy amount of olive oil (we love the taste).

  2. Coarsely chop the onions and toss into the pan with the pork.

  3. Add the mushrooms. (fresh would better, but again, this is supposed to be quick!) We drain and rinse them to lose a lot of the salty taste.

  4. Cook the egg noodles according to package directions.

  5. While all of that is cooking, mix up the gravy with the 2 c. water, according to package directions. Put on low heat on the stove and let simmer to start thickening.

  6. About the time that the gravy is thickening nicely, the noodles and pork mix should be done cooking.

  7. Throw everything into a large pan and stir well. No more cooking needed!

  8. Enjoy!
