Great lunch time side dish, especially when made with cucumbers fresh from the garden.

Recipe Ingredients for Quick Pickle

1 cucumber, peeled and sliced
1 tbsp sugar
1 tbsp cider vinegar
1 tbsp water

Recipe Directions for Quick Pickle

  1. Peel and slice cucumber. Place in a small container (that has a lid). Add sugar, cider vinegar, water, and a few ice cubes. Sprinkle with salt and pepper, if desired. Put cover on and shake.

  2. The calorie and sugar content information is perhaps a tad artificially high, since a portion of the sugar used is not consumed.
