Recipe Ingredients for quick penne and feta

3 oz pasta, whole wheat
2 tsp olive oil
1 clove garlic, finely chopped
1/2 zucchini, chopped
1/2 green bell pepper, stemmed, seeded, chopped
1/2 tsp oregano
1/2 tsp basil
1/8 tsp salt
1/8 tsp black pepper
2 tomatoes, seeded, chopped
2 tbsp balsamic vinegar
4 oz feta cheese, reduced fat, crumbled

Recipe Directions for quick penne and feta

  1. Prepare the pasta.

  2. Brown the meat or tofu in 1 tsp oil. Add the garlic, zucchini, bell pepper, oregano, basil, salt and pepper and cook for 2-3 min. until the vegetables have started to soften. Add the tomatoes and vinegar and cook for another 2-3 min.until the tomatoes have softened. Add the pasta then the cheese and stir gently.
