the recipe said use 100ml of olive oil, so I reduced this for my needs. I always cook with no added salt - people can always add their own to taste on their plate.

Recipe Ingredients for Quick One Pot Ratatouille

2 tbs olive oil
2 onions
1 eggplant,+peeled+yield+from+1-1/4+lb aubergine
2 large courgettes
1 red pepper
1 yellow pepper
2 garlic cloves
400 g tomatoes

Recipe Directions for Quick One Pot Ratatouille

  1. Heat oil in Large saucepan, add onions aubergine, peppers and garlic and cook, stir for a few mins until softened. Add tomato, Season if required (I only use pepper). Stir well.

  2. Reduce the heat cover pan tightly and simmer for 15mins until veg is cooked (may need to add a little stock??) use tomatoe puree to thicken at the end if ness. Remove from heat and serve with basil on top.

  3. can be turned into a pie by spooning into casserole dish and spreading 1lb (800g) mash potato mixed with 200g cheese (make healthier as you wish) bake @ 180 (gas 4) 20mins or til golden brown.
