Recipe Ingredients for Quick mushroom rice

10 oz mushrooms, sliced
2 t olive oil
1 onion, diced
1 t garlic
2 c cooked brown rice
1/2 c chicken broth
1/4 t sea salt
1/4 t black pepper
1 t parsley

Recipe Directions for Quick mushroom rice

saute onion in oil until beginning to brown - add garlic and cook for 1 more minute - add mushrooms and cook until the liquid is mostly out and boiled away - add salt and pepper - stir to combine - add broth and let simmer until reduced - add rice and warm through - sprinkle with parsley
