A delicious whole grain muffin ready in a minute-and-a-half. Add whatever suits your fancy to make it yummy!

Recipe Ingredients for Quick Muffins

3/4 cup Bran Flakes
3/4 cup All Bran cereal
1/2 cup boiling water
1 egg
1/4 cup Oil
1/2 cups sugar
1 cup Buttermilk
1 1/4 cups whole wheat flour
1 1/4 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla

Recipe Directions for Quick Muffins

  1. Mix bran cereals and boiling water. Add eggs, oil, sugar, and buttermilk. Sift together flour, soda, and salt. Fold in bran mixture, stirring only until mixed.

  2. Batter will keep for up to 7 weeks.

  3. Put in a ramekin or glass bowl or coffee cup about 1/2 full. Microwave on high for 1 min 30 sec. Add anything you want. cinnamon-sugar, blueberries, choc chips, cinnamon chips, raisins, nuts etc. No need to thaw blueberries if frozen.
