Recipe Ingredients for quick mini pizzas

2 whole wheat tortillas
6 mushrooms
1 small onion
2 tablespoons olive oil
1 clove garlic
8 tomatoes, sundried
3 tablespoons sliced black olives
30 grams reduced fat feta
125 grams low fat cheddar cheese

Recipe Directions for quick mini pizzas

  1. Slice both onions and mushrooms and sauté in a non stick pan. Reserve.

  2. Chop the garlic finely and add into olive oil with favorite herbs (we use basil and oregano-bout a tsp). Spread evenly on both tortillas.

  3. Lay the mushroom and onion mix followed by the sliced sundried tomatoes, olives and cubed feta. Add grated cheddar or mozarella cheese and bake 10mins (depending on taste) at 450F.

  4. Serve with a tossed salad.
