Recipe Ingredients for Quick Minestrone

4 ounces elbow macaroni
1 tablespoon olive oil
1 cup carrots, sliced
1 cup onions, chopped
2 tsp garlic, minced
29 ounces chicken broth
15 ounces diced tomatoes
8 ounces tomato sauce
2 1/2 tsp Italian seasoning
1 cup green beans, frozen or canned
15 ounces Great Northern Beans
10 ounces olives, sliced
1 black pepper to taste

Recipe Directions for Quick Minestrone

  1. Cook noodles according to package directions. Drain and set aside.

  2. Heat oil in Dutch Oven over medium high heat. Add sliced carrots and stir for a minute. Then add onions and garlic and cook for an additional minute until carrots are tender-crisp.

  3. Add both cans of broth, diced tomatoes, tomato sauce and Italian seasoning. Raise heat to high, cover pot and bring to boil.

  4. Meanwhile, drain and rinse the beans, drain the olives.

  5. When soup is boiling, add green beans, white beans and olives and let soup boil for about 5 minutes more.

  6. Season with black pepper to taste. Serve with grated Parmesan Cheese sprinkled on top if desired.
