Also known as King Ranch casserole, a quick and easy version.

Recipe Ingredients for Quick Mexican Chicken

6 thigh, bone and skin removed Chicken, Thigh, Meat Only

Recipe Directions for Quick Mexican Chicken

  1. 1. Grill, boil, or bake chicken. (We use our George Forman). Drain if boiled. Remove extra fat before cooking. After cooking, chop into bite sized pieces.

  2. 2. Combine all canned foods (except olives) in a bowl and mix well.

  3. 3. Layer chips, chicken, liquid mix, and cheese in that order in a cooking spray coated 9x12 casserole dish until finished with all ingredients except cheese (usually twice). Top with cheese.

  4. 4. Bake at 350 for 30 minutes or until heated through. Let stand 10 minutes Serve with side salad with cilantro, salsa or picante, etc. or green beans.
