You can also add onions and aubergine to this recipe, but i don't. Personal tastes. :)

Recipe Ingredients for Quick med veg!

1 cup chopped peppers
1 cup chopped mushrooms
1 cup chopped courgette
1 tbsp olive oil
4 tbsp balsamic vinegar

Recipe Directions for Quick med veg!

  1. Prepare veg, mushrooms can be chopped or quartered as they shrink a fair bit during cooking, and i find a chunky cut for the other veg is good.

  2. Add the oil to a saucepan and heat.

  3. Add the veg to the pan and quickly sautee.

  4. Add the balsamic vinegar, and put the lid on the pan.

  5. Turn the heat to medium, to prevent the veg burning.

  6. You need to keep an eye on this to make sure the liquid doesn't evaporate and burn the veg.... You may need to add a bit of water just to keep the veg cooking.

  7. When the veg is cooked, you can take the lid off and reduce the liquid if you need to, if not, bon appetite!!
