Craving cake? This is a quickie that can be made in the microwave! Make it special by adding fresh summer fruits and mascapone or whipped cream. Can be made healthier by substituting the butter, syrup and yogurt for healthier options, but it will not taste as decadent!

Recipe Ingredients for Quick Little Cake

1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/6 cup whole wheat flour
1/6 cup white flour
2 teaspoons butter
3 ounces Lowfat Plain
3 tablespoons maple syrup
1 teaspoon vanilla
1 egg

Recipe Directions for Quick Little Cake

  1. Stir all of the dry ingredients in a cereal bowl.

  2. Melt butter, add yogurt and maple syrup, and beat with a fork until smooth. Beat in the vanilla and egg. Pour this over the dry mixture and mix with a spoon until just smooth. Put in microwave at BAKE setting for 2 minutes. Let it sit for a minute, then use BAKE setting again for 2 minutes or so. Let it sit for 2 minutes to finish cooking. Remove from bowl to let it cool, or eat it hot! Tastes great with fresh fruit and mascapone cheese or whipped cream spread in as a layer cake, and repeated on top. NOTE: I have an older microwave - baking times will vary, as will the power setting.
