Light, quick and easy frittata. Delicious for breakfast, brunch, lunch or dinner.

Recipe Ingredients for Quick and Light Frittata

2 cup AllWhites
1 cup, chopped Onions
3 cloves Garlic
1 cup Asparagus
1 cup, pieces or slices Mushrooms
2 oz Irish Dubliner
1 oz Parmesan, Grated Cheese
2 1tsp Olive Oil
1/4 tsp Sea Salt
1 tsp Pepper, Black

Recipe Directions for Quick and Light Frittata

Heat oven to 375. Chop onions, mince garlic, rough chop mushrooms, and trim and cut asparagus into 1" pieces. Heat oil in 10" non-stick skillet. Add onions, garlic, mushrooms and asparagus and cook until onions are translucent. Grate cheddar and sprinkle over mixture. Combine egg whites, salt and pepper in a bowl. Pour egg white mixture over vegetables. Cook on med-low heat on stove top until edges are set. Sprinkle fresh grated parmesan over mixture and place in oven for about 7min. Then broil for a couple of minutes until cheese is lightly brown. Let stand 5 minutes before serving.
