Grab precooked lentils, prechopped mirepoix, and shredded green cabbage from Trader Joe's refrigerated produce section to cut down on prep time.

Recipe Ingredients for Quick Lentil Soup

2 tablespoons olive oil
1/3 cup onion
1/3 cup carrots
1/3 cup celery
1 clove garlic
1 quart organic chicken broth
1 cup shredded cabbage
17 3/5 ounces steamed lentils
1 serving herbes de provence
1 tablespoon tomato paste

Recipe Directions for Quick Lentil Soup

  1. Heat the olive oil over medium heat in a large pot. Add the onion, carrots, and celery, stir until they begin to soften.

  2. Press the garlic clove into the cooked veggies, stir until fragrant (10 seconds) and then add the chicken broth.

  3. Add the lentils, tomato paste, cabbage, and herbs. Stir until the tomato is distributed through the soup. Bring the soup to a boil for a couple of minutes before turning the heat down and serving.

  4. Optional: use an immersion blender to thicken about 1/3 of the soup. You still want to see lots of whole lentils.

  5. Served with soft goat cheese with cracked pepper on small toasts.
