Recipe Ingredients for Quick Hoppin' John

4 oz (Pulaski Meat Products) Schinkowa Kielbasa
1 small Onions
0.5 cup, chopped Peppers, Sweet, Green
1 stalk, medium (7-1/2" - 8" long) Celery
1.75 cup Blackeye Peas
1 g Seasoning
1 serving Red Hot Pepper Sauce

Recipe Directions for Quick Hoppin' John

  1. In a large saucepan, cook kielbasa (sliced thin) until crispy on the outside.

  2. Drain fat except for 1 tablespoon, and add green pepper, onion, and celery (all chopped). Cook until onion is tender.

  3. Stir in blackeye peas, Sazon seasoning, hot pepper sauce, salt & pepper. Reduce heat and simmer for about 5 minutes.

  4. Serve over white rice.
