eggplant parmesean over whole wheat speghetti

Recipe Ingredients for Quick Eggplant Parmesean

3 cups pasta sauce, tomato and basil
6 cups, cooked whole wheat speghetti
1 large eggplant
1/2 cup feta cheese
1/4 cup parmesean cheese
2 slices whole wheat bread

Recipe Directions for Quick Eggplant Parmesean

  1. preheat oven to 350

  2. slice (into 6 pieces)and peel one large eggplant

  3. put eggplant in oven safe dish

  4. pour 3 cups pasta sauce over eggplant

  5. crumble whole wheat slices into fine pieces and spread over top of sauce

  6. sprinkle over parmesean and feta

  7. bake 45 mins

  8. boil speghetti before removing.
