Recipe Ingredients for Quick & Easy Pork Stir-Fry

1 lb pork loin
2 cloves garlic, minced
1 tsp garlic powder
1 1/2 tsp ground ginger
1/2 c water
12 oz broccoli
1/2 red pepper
1/2 yellow pepper

Recipe Directions for Quick & Easy Pork Stir-Fry

  1. Cut any fat off pork cutlets, then cut into long thin strips. Lay flat, sprinkle with 1/2 tsp garlic powder and 1 tsp ground ginger, then toss lightly. Let sit while you cook rice according to package directions

  2. Spray large skillet or wok, heat. Add pork and cook uncovered on high, stirring occasionally for 8 minutes or until browned. Remove pork to heat resistant bowl, set aside. Don't wash pan - this will add flavor.

  3. In the same pan, stir together the broccoli and peppers, 1/2 tsp ginger, 1/2 tsp garlic, 1/2 c water and 1 TBS soy sauce. Cover and cook on high, stirring occasionally, for about 1 minute. Add cooked pork and cook, stirring, for about 2 more minutes.

  4. Serve over rice.
