when in a rush, this is really easy and good!

Recipe Ingredients for quick and easy pasta sauce

1 1/2 medium tomatoes, chopped
1/2 cup red onion, chopped
2 tsp olive oil
1 basil, oregano, pepper, garlic to taste
1/2 tsp fennel seed
2 tbsp grated parmesan cheese

Recipe Directions for quick and easy pasta sauce

  1. heat oil in pot.

  2. add onion and tomato, cook until onion is tender and tomatoes are a bit mushy.

  3. add all seasonings.

  4. put cooked pasta (drained) right into the pot with the sauce mixing gently, add parmesan, enjoy!

  5. Note: I use whole wheat pasta with this - rigatoni is good because the sauce gets inside the noodles and holds the flavors. The 4 servings can be a larger side dish or even a main course.
