Tasty, healthy, fresh, high fibre, vegetarian. Have with salad and hummus or tahini for dressing, or put it all in 1/2 a wholemeal/ wheat pita pocket.

Recipe Ingredients for Quick Easy Fresh Falafels

400 g can chickpeas
1 medium minced onion
1 T garlic
4 T flat leaf parsley, chopped
1 t coriander
3/4 t cumin
2 T whole wheat flour
1/2 t sea salt
1/2 t cracked black pepper

Recipe Directions for Quick Easy Fresh Falafels

  1. Drain chickpeas, rinse.

  2. Add all ingredients in a bowl and mash chickpeas, ensuring to mix ingredients together

  3. You can also combine ingredients in a food processor. You want the result to still have texture.

  4. Form the mixture into small ping pong sized balls, about the size of a ping pong ball. Slightly flatten.

  5. Bake or fry in 2 inches of oil until golden, 3 - 5 mins.
