didn't know what to make for supper and threw this together! not bad!

Recipe Ingredients for quick and easy chili mac

4 oz whole wheat pasta
1/2 lb ground pork
10 cherry tomatoes, chopped
15 oz red beans, canned, drained
8 oz tomatoes, canned, diced
2 1/2 tsp garlic powder
3 tsp chili powder
2 tsp ground cumin
2 tsp oregano
1/2 tsp cinnamon
1/8 tsp salt
1/2 tsp black pepper
1 cayenne pepper to taste
1/4 cup shredded cheddar cheese

Recipe Directions for quick and easy chili mac

  1. cook pasta according to directions on box.

  2. while pasta is cooking, brown the pork, drain.

  3. add cherry tomatoes and red beans, cook until tomatoes are mushy.

  4. add the canned/diced tomatoes or add about 1/4 cup prepared salsa (I use one with lime - adds a good flavor!), cooking thoroughly.

  5. add all the spices (we like it spicy!).

  6. drizzle with 1/4 cup shredded cheese.

  7. bake at 350 degrees for about an hour.

  8. it's a meal all in one although I cooked up one small sweet potato with a mini banana (baked in oven with just a touch of salt and pepper, wrapped in foil sprayed with cooking spray - cook that for the same 1/2 hour the chili mac is in the oven).
