With so few ingredients, the big crunchy taste of this salad is unexpected. Low-fat, packed with vitamin A and a nice dose of protein and fiber also!

Recipe Ingredients for Quick & Easy Carrot Salad

1 cup low-fat yogurt
10 ounces shredded carrots
1 cup raisins
1 tsp. cinnamon
1/4 tsp. allspice

Recipe Directions for Quick & Easy Carrot Salad

Drain liquid off of yogurt (overnight in a narrow funnel, if desired). Combine all ingredients, refrigerate a few hours to blend flavors before serving, if desired. Keeps up to a week in the fridge (check date on carrots esp. if you buy them pre-shredded)
